Gulla thalesaani( Brinjal roasted in garlic)

This is one of the most common dishes prepared in the coastal karnataka by GSBs. The green brijal, called as "Gulla" is grown widely in this region. The taste of this gulla is very different from other varieties of brinjal. This recipe fuses a strong flavour of roasted garlic and red chilli with the brinjal. The dish is called "Gulla Thalesaani" in konkani. I like this dish with curd and rice.

Ingredients

Brijal (Gulla) cut into medium pieces: 500g

Red chilli long: 4

Drumsticks: 2 long, cut into 3inch long pieces.

Garlic crushed: 10 to 12 cloves

Oil: 2tbsp

salt to taste

water: 150ml

Method

Heat oil in a pan. Coconut oil will give this dish a real traditional touch. Once the oil is hot, add crushed garlic pieces and saute till golden brown. This step will bring all the garlic flavours into the oil. Then add red chilli and sautee for 30sec. Do not let the chillis burn.


To this, add cut brinjal and drunsticks. Add salt to taste. A bit more salt will go well with the dish and turns the drumsticks perfectly seasoned. Add water, mix well and let it cook in medium flame. once the water evaporates, mix well again. Add some more water if needed and roast gently.


Gulla thalasaani is ready to be served with rice and curds.
