Roasted Okra in Olives and Tomatoes

Though I am not a big fan of Okra because of its gooey texture, this recipe transforms okra into a crispy and tasty dish. The crunchy okra sauteed in olives, onions and tomatoes are yum to eat.

Ingredients

250g Okra cut into half

1tsp red chilli powder

2tsp coriander powder

1/4tsp turmeric powder

1/2cup cornflour

1/2tsp garam masala

1/2tsp tamaring paste

1 tomato, diced

1 Green chilli

2 medium onion, diced

5-6nos big olives

6nos curry leaves

1 inch ginger. finely chopped

1ts ginger garlic paste

oil- as required

salt as required.

water as required

Corriander leaves for garnishing

Method

Take cut okra in a bowl. Add red chilli powder, garam masala powder, tumeric powder, coriander powder, Ginger garlic paste, salt to taste and tamarind paste. Mix well. Then add cornflour and mix. Okra should be smeared in masala. Add a bit of water to bind the mixture to okra and set aside for 20mins.


Heat oil in a pan and fry the marinated okras till they are brown and crisp. Now the roasted okras are ready for next step.


Heat 1tsp oil in a pan. Add onions and fry till golden brown. Add green chilli and curry leaf to the onions. Fry for one minute. Then add tomatoes and olives (I usually cut them into two length wise). I add olives to give this dish a base flavour from the oil that is released when cooking. Keep few bits of tomatoes for garnish.


If you need more flavour you can add a bit of coriander powder and pinch of garam masala.


Cook the mixture for 1 minute and then add roasted okra. Mix well and cook for 1mins in low flame.


Transfer the dish to a bowl. Garnish with coriander leaf and tomatoes. I add bits of tomatoes to garnish to enhance the color contrast.


This dish serves as a tasty side dish for your meal.
